Shiitake Mushroom
Lentinula edodes or ‘Shiitake’ mushrooms originate from Japan and Korea. Their common name comes from the Japanese words shii, denoting a kind of oak, and take, meaning ‘mushroom’.
These beautiful mushrooms have a meaty texture and rich flavour. In the wild they grow on dead trees so, to simulate this during cultivation, we grow them on sawdust.
Lion's Mane Mushrooms
Hericium erinaceus or Lion’s Mane is an edible and medicinal mushroom belonging to the tooth fungus group. It is native to North America, Europe and Asia. It is revered for its brain, memory and cognition-enhancing benefits.
Pink Oyster Mushroom
Pleurotus djamor or Pink Oyster Mushrooms grow naturally on hardwoods in tropic and subtropic regions around the world. To simulate their favourite growing environment we use 100% straw.
These strikingly beautiful, bright pink mushrooms fade to a creamy grey when cooked.
White Oyster Mushrooms
Pleurotus ostreatus is the name given to all Oyster Mushrooms due to their oyster-shaped cap. There are many different colour strains.
They can be eaten raw or cooked. Their delicate texture and subtle flavour rapidly absorbs other flavours during cooking.
Yellow Oyster Mushrooms
Pleurotus citrinopileatus or Yellow Oyster Mushrooms are native to eastern Russia, northern China, and Japan.
They can be eaten raw or cooked. Their delicate texture and subtle flavour rapidly absorbs other flavours during cooking.
